cupcakes and a bump.

I know. Delicious right? I made these for a very special friend who passed a major test last week, so last night these cupcakes were a symbol of celebration. They are called peanut butter oreo chocolate cupcakes. Allow me to share this piece of heaven with you--

Cupcake ingredients:
1 c. flour
1 c. sugar
1/4 c. plus 2 tbsp. of cocoa powder
1/2 tsp. baking soda
1 tsp. baking powder
1/8 tsp. salt
1/4 c. butter, melted
1/4 c. oil
1/2 c. water
1 large egg
1/4 c. milk mixed with 1 tsp. vinegar
1 teaspoon of vanilla extract
Peanut butter Oreos

Combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt in a large mixing bowl. Make a well in the center of the dry ingredients, and add the butter, oil, water, egg, milk and vanilla. Mix all ingredients well with an electric mixer.  
Put twelve paper muffin cups in a muffin pan, and place one peanut butter oreo at the bottom. Pour the cupcake batter over the top of the oreo until the muffin cup is 3/4 full. Back at 350 degrees for about 25 min, and allow to cool.

Peanut butter frosting ingredients:
1/2 c. light butter
1 c. smooth peanut butter
1 1/4 c. powdered sugar
1/4 c. milk

Using an electric mixer, beat the butter until it is fluffy. Add the peanut butter, sugar, and milk. Frost the cupcakes when they've cooled. Crush a few of the remaining oreos and sprinkle over the frosting. Enjoy and try not to eat more than one ;)...
